Heat half the oil in the pan and fry the onion until soft. Add garlic and chilli flakes. Then add the chopped tomatoes with the sugar and season to taste. Reduce heat and simmer until thickened. Stir in the mascarpone.
Heat a non-stick pan and fry the chicken until cooked through.
Preheat the oven to 220C/200C fan/gas 7. Cook the pasta according to instructions, drain and add remaining oil. Combine the pasta, chicken and sauce in a medium sized ovenproof dish. Sprinkle over the cheddar, mozzarella and parsley. Cook in the oven for 20mins or until brown and bubbling.
