Christmas gingerbread cookies to enjoy over the festive period!
In a bowl, sift together flour, cinnamon, ginger, and bicarbonate of soda.
Add in the butter and then whisk (using a food processor or electric whisk) until the mix looks like breadcrumbs.
Stir in the sugar.
In a separate bowl lightly beat together the egg and golden syrup.
Then add this to the mixture and whisk until the mixture clumps together.
Flour your surface and then tip the dough out, kneading until smooth.
Then wrap in clingfilm and leave in the fridge for around 20 minutes.
Preheat your oven to 180C/Gas 4 and line your baking trays with greaseproof paper.
Roll the dough out to a 0.5cm thickness on a lightly floured surface.
Use cookie cutters of your choice, to cut out shapes of the dough and then place them on the baking tray.
Bake for 12-15 minutes, or until lightly golden-brown.
Allow to cool completely before decorating.
