Healthy Chicken Pasta Bake

Ingredients
 300 g Penne/Pasta of your choice
 2 tsp Olive Oil
 2 Peppers
 3 Large Garlic Cloves (finely grated)
 500 g Carton Passata
 1 tbsp Smoked Paprika (Optional)
 400 g Chicken Breasts (2 large), cut into chunks
 20 g Finely grated mature cheddar

Cook the pasta in a saucepan of hot water and drain when pasta is cooked but keep the pasta water.

Heat the oven to 180C/160C fan/gas 4.

Put 2 tsp of oil in large pan and heat over a medium heat.

Then chop the peppers and add them in frying for around 8 mins or until they start to soften.

Add the garlic and stir for a few minutes.

After this, tip in the passata and stir in the smoked paprika.

Allow to simmer for 3-4 mins.

Then tip the pasta into the pan along with the chicken and a small cupful of pasta water and stir together.

Place into a baking dish and top with cheese of your choice.

Bake for around 30 minutes and then serve.
