Easy mince pies for you all to enjoy this festive season!

Ingredients
 350 g Plain Flour
 1 Egg Yolk
 225 g Butter
 280 g Mincemeat
 100 g Golden Caster Sugar
Method

For the pastry, rub the butter into the flour and then mix in the golden caster sugar.

Combine the pastry into a ball and knead it for a short time.

Then heat the oven to 200C/180C fan/gas 6.

Line your baking tray and then create small balls of pastry pressing them into each hole on the baking tray.

Spoon the mincemeat into the pies and using the remaining pastry take slighter smaller balls than before rolling them to make round lids ensuring they are big enough to cover the pies and place on each pie.

Press around the edges of each pie to seal the lids. Then brush the top of the pies with egg wash {beat the egg in a bowl and use a pastry brush}.

Bake for 20 minutes until golden.

Leave to cool for 5 minutes then lightly dust them with icing sugar and serve.
