Perfect, delicious and easy...three words to describe these Pitta/wrap pizzas...go on give it a go!
In a large saucepan, heat the oil over a medium heat (for a healthier alternative - use fry light).
Then, add in onion, carrot and peppers and fry until softened.
Add the garlic and fry for a few minutes, stirring regularly.
After this, add in the chopped tomatoes, puree, salt and pepper and 100ml of water. Stir well and then bring to the boil.
Allow this to simmer for 18-20 minutes, stirring regularly until the veg is soft and most of the liquid has evaporated.
Using a blender of choice, blend the mixture to a very smooth puree (or the consistency you like).
Pre-heat your grill to the highest setting.
Then, place pittas/wraps onto the baking trays and spread tomato sauce over each.
Add cheese on top and your chosen toppings.
If you want to save some of the pizzas for another day, you can place them in freezer bags and put them in the freezer!
Then, grill the pizzas for a few mins until the bread it hot and the cheese has melted.
