Valentine’s Day Brownies

Struggling with what to get your loved one this Valentines? Satisfy their tastebuds with the gift of delicious chocolate brownies!

Ingredients
 185 g Unsalted butter
 185 g Chocolate of your choice (dark chocolate is recommended)
 85 g Plain Flour
 40 g Cocoa Powder
 50 g White Chocolate
 50 g Milk Chocolate
 3 Large Eggs
 275 g Golden Caster Sugar

Cut the unsalted butter into cubes and then place in a bowl.

Break the chocolate and add to the bowl.

Fill a small saucepan with hot water, only around a quarter full and then sit the bowl on top so it rests on the rim of the pan (not touching the water).

Place on a low heat until the butter and chocolate have melted.

Remove bowl from pan and allow melted mixture to cool to room temperature.

Preheat the oven to 180C/160C fan/gas 4.

Grease the base of a 20cm square tin with non-stick baking parchment.

Sieve plain flour and cocoa powder into a bowl, ensuring to get rid of any lumps.

Chop white and milk chocolate into chunks.

Break eggs into a bowl and add in caster sugar. Using an electric mixer, whisk on maximum speed until the mixture becomes thick and creamy. You will know its ready when the mixture becomes really pale and double the volume it was originally.

Pour the cooled chocolate mixture over the eggy mousse, then gently fold together with a rubber spatula. Important to be slow and gentle so to not knock any air out.

Then add the cocoa and flour mixture to this bowl of chocolate and eggy mousse mixture and gently fold in. The mixture should become somewhat fudgy and at this stage stop so you don’t overdo the mixing.

Lastly, stir in the white and milk chocolate chunks.

Pour mixture into a tin and even out with a spatula.

Put in the middle tray of the oven and set the timer for 25 minutes. If the brownie wobbles at all after the 25 mins bake it for another 5 minutes until done.

Leave in the tin until cold. Once cold take out of the tin and cut it into squares, triangles or go all out and use heart shaped cutters to create heart shaped brownies (how romantic)!

You can keep your bakes in an airtight container for 2 weeks and in the freezer for up to a month.

Bonus idea: Decorate your brownies with some heart confetti or icing to give them that valentines touch!
